A fermented durian with assorted herbs leaf is a traditional dish in Negeri Sembilan . The food is simple and easy to made . Adding the fermented durian with herbs made it most delicious and astonishing food in Negeri Sembilan . The community in Negeri Sembilan tend to mixed a few leaf herbs but it also can only add ' pucuk ubi 'n. Your choice to made it either you want only certain herbs leaf or all herbs leaf you can found .








The step by step produce for the current recipe to prepare Sambal Tempoyak Daun Kayu is :





1. The ingredients of the dish are chilies , fresh turmeric , tapioca leaves , pieces turmeric leaves , pieces daun kaduk , stalks of lemon grass , anchovies , petai ( sator ) , anchovies and tempoyak .


2. The recipe starts off with beating chilies and 1/2 tea spoon of fresh turmeric . The turmeric is obrained from the ginger family . Then on the other side chip one bunch of topioca leaves ( pucuk ubi kayu ) along with that chop two pieces of turmeric leaves then chop five pieces of daun kaduk which is known as the wild pepper leaves .

3. Then chop two stalks of lemon grass , the lemon grass needs to be finely chopped because in order to get a good mixture of add the spices it is important that all the ingredients should be finely chopped . The lemon grass gives great taste to the dish and it makes the dish very refreshing.

4. Put all these above mixture in one pan and put it on low flame . Once  all the mixture is mixed then add ten to twelve pieces of anchovies in the pan at low heat .

5 . Anchovies are the small size salt water forage fishes . These tablespoon of tempoyak will be added in the mixture . Tempoyak is a Sumatran dish which is mainly a fermented durian fruit . Mix all the ingredients that were added in the dish and put it on low flame to cook it nicely . Add a little bit of water in the dish so that lemon grass and petai and cooked properly .






Attention : The mixture needs to be stir after every five minutes so that the mixture is not burn , the overall mixture needs to be about mixed for about ten to fifteen minutes and a pinch of salt needs to be added in the dish to add additional flavour to the dish . This dishes will be ready in thirty minutes and at the same time the plain rice are prepared . The procedurebof rice is to add waterb in a pan on high flame . Add rice until gets soft and then throw the water and then serve it with Sambal Tempoyak Daun Kayu .
