IKAN PATIN TEMPOYAK

- A delicious traditional inland river areas dish


1)The history behind the creations

  •  Pahang food features a lot of seafood.From its rivers and lakes come the fresh water fish such as the patin fish ( silver catfish ).One of the most famous dishes in Pahang is ikan Patin Masak Tempoyok. This a traditional dish,popular in the inland riverine areas where the patin fish (silver catfish) in found in abundance especially in the Pahang river. Large catfish cooked in various ways such as gulai and asam pedas.Next, The ikan patin masak tempoyok dish is not  that complicated dish is not that complicated to cook,except that the durian paste or tempoyak must be available as it gives the special flavour and hence the name of the dish.The durian is a seasonal fruit in pahang, but the tempoyak ( durian paste ) can last for many months. Many rural Malay households keep the tempoyak in big bottles for use during cooking.

2) The ingredients used and process making 

  • The main dish, Patin fish need to be clean and cut into three or four pieces,and other ingredients such as tempoyok ( durian paste ) , chili padi , bunga kantan,lemon-grass, 'daun kesum ' ,ginger,plain water,cooking oil and fine sugar needed.
  • First,warm oil in the pot.Saute the chili padi and ginger and stir them for a while.
  • Throw in the lemon-grass,bunga kantan and daun kesum into the pot.
  • Then add water into the pot.Add the tempoyok and mix them all together.Stir until they all blend nicely
  • Then put in the pieces of patin fish
  • When the pot is boiling,put in salt and sugar according to taste.
  • Boil until the fish is fully cooked

3) The uniqueness and specialty of this food
  • This dish is mostly eaten with rice.But it can ce eaten with rice at least three different dishes ,comprising of fish,meat ( like chicken , beef , lamb and so on ) and vegetables.This dish is delicious when eaten with rice.For some Malays the gravy will taste more wonderful when salty soya sauce is added.The "tempoyak " is a mashed durian which we keep fermented for a duration of time.The longer the durian is fermented,the better is taste.But all the same,the dish is as delicious as the "king of fruits " itself; the durian.
